Sweet Basil Roasted Tomatoes

Ingredients

  • 2 pints cherry tomatoes, cut in half
  • 1/4 c. EVOO
  • 2 T. aged balsamic vinegar
  • 2 large garlic cloves, minced
  • 2 tsp. sugar
  • kosher salt and fresh ground pepper, to taste
  • 10 large basil leaves, chopped

Preparation

Step 1

Preheat oven to 400.

Arrange tomatoes on a sheet pan, cut side up, in a single layer. Drizzle with EVOO and balsamic vinegar. Sprinkle with the garlic, salt and pepper. Cook for 10 minutes, then give the tomatoes a quick stir with a wooden spoon. Roast for another 10 - 15 minutes, until tomatoes begin to caramelize. Remove from oven and sprinkle chopped basil over the top. Serve warm or at room temperature.
