Beef barley soup

Ingredients

  • 1 1/2 lb been shank (bone & meat)
  • 2 lbs marrow bone
  • 2 1/2 qt. water
  • 1/4 cup parsley flakes
  • 1 cup diced celery
  • 1 cup diced carrots
  • 2 tsp salt
  • 2 tbs. instant minced onion
  • 1/2 tsp black pepper
  • 1/2 tsp ground ginger
  • 1 0- 10 oz can whole mushroomns
  • 1/2 cup barley

Preparation

Step 1

Place meat, bones, water, parsley, celery, salt, onion, pepper and liquid from mushrooms in large kettle, cover, simmer about two hours. Remove bones, cut meat into bite size pieces.
Add carrots & barley, cover and simmer for about 2 hours until barley is cooked. Add canned mushrooms about 15 min. before soup is cooked. Add seasoning.
