Ann's Potato Salad

Ingredients

  • 3 eggs (or eggbeaters or combination), beaten
  • 1/2 C sugar
  • 1 T cornstarch
  • 1/4 C vinegar
  • Dash salt
  • Small can evaporated milk
  • 4 stalks celery, sliced thin
  • 4 fist-sized potatoes, cubed and cooked
  • small onion, chopped
  • 4 T Miracle Whip - low fat is fine
  • 6 hard cooked eggs, chopped (may use just the whites if desired)

Preparation

Step 1

- Combine first 5 ingredients in saucepan and bring just to a boil - egg whites will cook if boiled too much; cool
- Combine remaining ingredients with cooled dressing; chill
