Ann's Potato Salad

Ingredients
- 3 eggs (or eggbeaters or combination), beaten
- 1/2 C sugar
- 1 T cornstarch
- 1/4 C vinegar
- Dash salt
- Small can evaporated milk
- 4 stalks celery, sliced thin
- 4 fist-sized potatoes, cubed and cooked
- small onion, chopped
- 4 T Miracle Whip - low fat is fine
- 6 hard cooked eggs, chopped (may use just the whites if desired)

Preparation
Step 1
- Combine first 5 ingredients in saucepan and bring just to a boil - egg whites will cook if boiled too much; cool
- Combine remaining ingredients with cooled dressing; chill
