Ingredients
- Vinaigrette
- 1/3 cup extra virgin olive oil
- 1/4 cup lemon juice
- 2 cloves garlic
- 1/4 tsp kosher salt
- 1/8 tsp red pepper flakes
- Pasta
- 6 ounces angel hair pasta, cooked al dente
- 2 ounces thinly sliced prosciutto
- 1 cup loosely packed arugula
- 1/2 cup grated Parmesan cheese
- Optional Toppings
- extra Parmesan cheese
- additional red pepper flakes
Preparation
Step 1
1. In a blender or food processor, add vinaigrette ingredients and pulse until well combined. Set aside.
2. In a large mixing bowl, add spaghetti, prosciutto, arugula and the vinaigrette. Toss to combine. Add Parmesan cheese and mix gently.
