Ingredients

  • Vinaigrette

  • 1/3

    cup extra virgin olive oil

  • 1/4

    cup lemon juice

  • 2

    cloves garlic

  • 1/4

    tsp kosher salt

  • 1/8

    tsp red pepper flakes

  • Pasta

  • 6

    ounces angel hair pasta, cooked al dente

  • 2

    ounces thinly sliced prosciutto

  • 1

    cup loosely packed arugula

  • 1/2

    cup grated Parmesan cheese

  • Optional Toppings

  • extra Parmesan cheese

  • additional red pepper flakes

Directions

1. In a blender or food processor, add vinaigrette ingredients and pulse until well combined. Set aside. 2. In a large mixing bowl, add spaghetti, prosciutto, arugula and the vinaigrette. Toss to combine. Add Parmesan cheese and mix gently.
