QUICK CREAM OF BROCCOLI SOUP

Ingredients

  • 1 Tbsp. butter or margarine
  • 1 medium onion, chopped
  • 1 package (10 oz.) frozen
  • chopped broccoli
  • can (14.5 oz.) chicken broth
  • 1/4 tsp. dried thyme
  • Salt and pepper
  • Nutmeg
  • Ground red pepper (cayenne)
  • 1 1/2 , cups milk
  • 2 tsp. fresh lemon juice

Preparation

Step 1

1. In 3-quart saucepan on medium,
melt butter. Add onion; cook, stirring,
until tender, about 5 minutes. Add
broccoli, broth, thyme, 1/8 teaspoon
salt, 1/8 teaspoon ground black pepper,
pinch of nutmeg, and pinch of ground
red pepper; heat to boiling. Reduce
heat; simmer 10 minutes.
2. In blender, with center part of cover
removed to allow steam to escape, puree
half of mixture until smooth. Pour
pureed soup into large bowl after each
batch. Repeat with remaining mixture.
3. Return puree to saucepan; stir in
milk. Heat through, stirring often
(do not boil). Remove from heat and
stir in lemon juice.
