Ingredients
- 1 lb. boneless skinless chicken breast or thighs
- 1 tbsp. vegetable oil
- 2 cloves garlic, minced
- 1 sweet red pepper, chopped
- 1 cup barbecue sauce
- 2 tsp. soy sauce
- 1 can 14 oz. pineapple tidbits, drained
Preparation
Step 1
Cut chicken into bite-size pieces. In large skillet, heat oil over medium high heat; brown chicken in batches, 2 minutes. Add barbecue sauce, soy sauce and pineapple; stir until hot and chicken is well coated.
Serve over rice.
