Ingredients
- 2 large sweet yellow onions
- 3 cups buttermilk
- 2 eggs
- 3 Tb. water
- 1 3/4 cups flour
- 2 tsp. salt
- 2 tsp. chili powder
- 1-2 tsp. cayenne pepper
- 1 tsp. sugar
- 1 tsp. garlic powder
- 1 tsp. ground cumin
- Vegetable oil for frying
Preparation
Step 1
Cut onions about 1/4 inch thick. Separate into rings. Place in a large bowl and cover with the buttermilk and let soak for at least 30 minutes. This is important because the buttermilk helps to soften the onion. Stir the onions in the buttermilk a few times during the 30 minutes. In another bowl, mix together the eggs and water. In a large ziplock bag, combine the flour, salt, chili powder, cayenne pepper, sugar, garlic powder and cumin. Drain the buttermilk from the onions. Dip each onion ring into the egg mixture, then place in the ziplock bag of flour mix. When you have a good amount of the onions in the bag, shake to coat the onions. Then put the onions a few at a time into the hot oil for frying. Remove them, after they turn a golden brown, onto a paper towel for it to cool slightly before eating.
