Prawn Spinach Salad with Fennel

Ingredients

  • 8 tb olive oil
  • 1 tb fennel, crushed
  • 1 tsp dried red pepper flakes
  • 1 head spinach or arugula
  • 2 cups tomatoes, chopped
  • 1 3/4 lb large prawns, uncooked
  • 5 thick bacon slices, cut and crisped (save fat)
  • 5 tb olive oil
  • 1/4 cup balsamic vinegar
  • 3 tb shallots, minced
  • 1 tb garlic, minced
  • 1 tb brown sugar

Preparation

Step 1

1) Chop prawns, sliced into thirds. Put prawns on skewers and marinate 1/2 hour with fennel bulbs.
2) Grill fennel and prawns.
3) Whisk in all ingredients into 3 tb of fat.
4) Heat salad dressing and pour over all.
5) Toss and add all ingredients.
