Roasted Asparagus and Grape Tomatoes

Ingredients

  • 1 bunch asparagus
  • 1/2 cup grape tomatoes
  • 1-2 Tbsp. grapeseed or olive oil
  • Kosher salt and coarse ground pepper

Preparation

Step 1

Preheat oven to 425.
2. Arrange asparagus and tomatoes on a rimmed baking sheet. Drizzle with oil and toss to combine.
3. Lightly season with salt and pepper and roast for 20-25 minutes. Watch to make sure tips brown but do not burn.
