Potatoes with Onion and Herbs

Ingredients

  • 2 lbs waxy potatoes cut into cubes
  • 1/2 C butter
  • 1 red onion, cut into wedges
  • 2 cloves garlic, crushed
  • 1 tsp lemon juice
  • 2 T chopped fresh thyme
  • salt and pepper

Preparation

Step 1

Cook the potatoes in boilinjg water for 10 minutes. Drain thoroughly.

Melt the butter in a large heavy based frying pan and add the red onion wedges, garlic and lemon juice. Cook 2 - 3 minutes, stirring.

Add potatoes and mex well to coat. Reduce heat, cover and cook for 25 - 30 minutes or until potatoes are golden and tender.

Sprinkle with thyme and season with salt and pepper.
