Ingredients
- 2/3 cup sugar (I use xylitol natural sugar found at organic stores)
- 1/4 cup butter softened
- 1 egg
- 2-3 very ripe bananas
- 1/3 cup lowfat buttermilk
- 1 teaspoon vanilla
- 1 cup Bobs whole wheat pastry flour
- 3 scoops Mila (found at www.lifefood.lifemax.net)
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup nuts (optional)
Preparation
Step 1
1. Preheat oven to 350F, grease bottom of loaf pan. Place rack on low position in oven.
2. Mix sugar and butter, stir in egg, add bananas (mashed), buttermilk and vanilla. Beat until smooth. Stir in flour, Mila, baking soda and salt just until moistened. Stir in nuts.
3. Bake-check in 40 minutes - Enjoy!
