Squash Souffle

Ingredients

  • 3 lbs yellow squash
  • 2 eggs
  • 1/2 cup matzo meal
  • 1/2 cup onions
  • 1/2 tsp pepper
  • 1 tsp salt
  • 1/2 stick margarine
  • 1 Tbsp sugar

Preparation

Step 1

Saute sliced squash and onions together in 4 Tbsp margarine or oil.
When tender, mash remaining ingredients.
Melt 4 Tbsp of margarine or oil and coat baking pan.
Pour mixture into pan.
Sprinkle with crushed potato chips.
Bake at 375 degrees for 35 to 40 minutes, until firm
