SHRIMP DIP

Ingredients

  • 1 1/2 - 2 POUNDS LARGE COOKED SHRIMP
  • FRESH CHIVES - THINLY SLICED
  • FRESH DILL (GARNISH)
  • 1 MEDIUM YELLOW ONION
  • 8 OZ CREAM CHEESE SOFTENED
  • MAYO TO TASTE
  • 1/2 TSP GARLIC POWDER
  • SALT TO TASTE

Preparation

Step 1

PUREE (COARSELY, LEAVING SOME LARGE PIECES) ALL BUT 1/2 LB SHRIMP IN FOOD PROCESSOR. CUT REMAINDER INTO 1/2" PIECES AND RESERVE.

PUREE ONION. COMBINE PUREED SHRIMP AND CUT PIECES, PUREED ONION, CREAM CHEESE, MAYO, GARLIC POWDER AND PART OF THE SLICED CHIVES. MIX WELL.

ADD SALT-VERY LITTLE. REFRIGERATE 2 HOURS, MIX AND ADD SALT AND GARLIC IF NEEDED. MOLD INTO DOME/BALL AND LIGHTLY SPRINKLE WITH RESERVED CHIVES. GARNISH WITH SPRINGS OF FRESH DILL.
