CLASSIC CARROT BRAN CAKE

Ingredients

  • 1 1/2 1 1/2 cups Planters peanut oil
  • 4 eggs, separated
  • 2 1/2 2 1/2 cups flour
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup Nabisco bran
  • 1/2 cup chopped nuts
  • 2 cups raw carrots
  • 1/2 tsp cloves
  • 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/4 cup water
  • 2 cups sugar

Preparation

Step 1

Blend all the wet ingredients together, add in the dry ingredients. Stir in carrots, nuts and cereal. Beat egg whites until they come to a peak, and then fold them into the batter. Bake for 3-50 degrees Farenheit for 50 to 60 minutes. When cool, ice cake. CREAM CHEESE FROSTING 250 gram package cream cheese, 2 cups icing sugar, 2 tsp lemon juice.
