Roasted Broccoli with Lemon and Parmesan

Ingredients

  • 1 large head of broccoli, cut into 1 1/2" florets, stems peeled and sliced 1/4" thick
  • 1/4 c. extra-virgin olive oil
  • Salt and pepper
  • 2 tsp. fresh lemon juice, plus the zest of a lemon
  • 1 tsp. minced shallot
  • 2 Tbs. freshly grated Parmesan cheese

Preparation

Step 1

Preheat oven to 400. On a large baking sheet, toss the broccoli with 2 Tbs. of the olive oil and season with salt and pepper.
Roast the broccoli in the oven for about 30 min. tossing halfway through.
In a small bowl, whisk the lemon juice with the shallot and the remaining 2 Tbs. of oil; season the dressing with salt and pepper. Scrape the broccoli into a bowl.
Add the dressing the grated cheese, toss well then top with the zest.
