large head of broccoli, cut into 1½" florets, stems peeled and sliced ¼" thick
c. extra-virgin olive oil
Salt and pepper
tsp. fresh lemon juice, plus the zest of a lemon
tsp. minced shallot
Tbs. freshly grated Parmesan cheese
Preheat oven to 400. On a large baking sheet, toss the broccoli with 2 Tbs. of the olive oil and season with salt and pepper. Roast the broccoli in the oven for about 30 min. tossing halfway through. In a small bowl, whisk the lemon juice with the shallot and the remaining 2 Tbs. of oil; season the dressing with salt and pepper. Scrape the broccoli into a bowl. Add the dressing the grated cheese, toss well then top with the zest.
