PINEAPPLE RICE

Ingredients

  • 1 cup jasmine rice
  • 1 slice (1/4") fresh ginger root, peeled
  • 1 TBS butter
  • 1 ` tap salt
  • 1 can 8 ox drained pineapple tidbits
  • 1 cup diced red bell pepper
  • 1/2 cup diced onion
  • 1-2 TBS minced jalapeño
  • 1/2 cup cashews, coarsely chopped
  • 2 TBS fresh cilantro

Preparation

Step 1

1. Prepare rice according to package directions, adding ginger root, butter and salt before cooking. Remove and discard ginger root.
2. While rice cooks, sauté onion and pepper until tender. Add pineapple, onion, bell pepper and jalapeño to rice and let stand 5 "
3. Stir in cashew and cilantro. Fluff rice with fork before serving.
