Ingredients
- Pineapple Upside Down Cake
- 1 1/4 cups flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 3 T margarine
- 1/2 cup brown sugar
- 1 can pineapple rings
- Maraschino cherries
- 1/3 cup soft margarine
- 1/2 cup sugar
- 1 egg unbeaten
- 1 tsp.vanilla
- 1/2 cup syrup reserved from pineapple
Preparation
Step 1
Mix dry ingredients. Melt butter in 8” cake pan on top of stove. Remove & sprinkle brown sugar over melted butter. Drain pineapple & save syrup. On brown sugar mixture arrange pineapple to form small daisy. Repeat making 5 daisies. Place cherries in center. Cream shortening, egg & vanilla. Blend alternately with flour mixture & pineapple juice. Spread batter over pineapple design. Bake at 350 for about 1 hour. Cool 10 min. and invert onto cake plate.
