Beef Stroganoff (Vallerie)

Ingredients

  • 1 tbsp vegetable oil
  • 1 lb lean beef steak, cut strips
  • 1 onion, finely chopped
  • 1 cup sliced mushrooms
  • 2 tbsp tomato paste
  • 2 tbsp all purpose flour
  • 1 tsp paprika
  • 2 cups beef broth
  • 1/2 cup light sour cream
  • 1 pkg Catelli Healthy Harvest Yolk free Extra Broad Noodles

Preparation

Step 1

In large sauce, heat oil and brown beef; remove and set aside. To remaining oil in saucepan, saute onion, garlic and mushrooms until tender.

Add tomato paste and cook 2 minutes. Add flour and paprika, cook stirring constantly for 2 to 3 minutes.

Gradually stir in broth, cook and stir until thickened. Stir in sour cream and reserved beef, heat through; do not boil. Cook noodles according to package directions.

Toss noodles with beef mixture.
