  • French Onion Soup
  • 1/2 lb. Spanish or yellow onions sliced paper thin
  • 2 T butter – no substitutions
  • 1 quart beef broth
  • 1/8 tsp. pepper
  • 4 slices French bread
  • 4 slices provolone cheese

Preparation

Step 1

Stir-fry onions and butter in a large saucepan over low heat until pale golden, 10-15 minutes. Add broth & pepper. Cover and simmer 20-25 minutes, stirring occasionally, until onions are very tender.
Preheat oven to 400. Toast bread: ladle soup in ovenproof bowl & float toast on top. Top with cheese and bake for 5-7 minutes until cheese is lightly browned and bread is puffed. Serves 4
