Tomato chicken casserole

Ingredients

  • 3 1/2 pd chicken breasts
  • 14.5 oz can diced tomatoes
  • 1 onion diced
  • 1 1/2 c mushrooms no stems chopped
  • 1/2 c chicken broth
  • 1/3 c flour
  • 3 T olive oil
  • 2 T unsalted butter
  • 1 t garlic salt
  • salt and pepper
  • Plum tomatoes for garnish
  • Parmesan cheese

Preparation

Step 1

Preheat oven to 375
heat olive oil and butter in large skillet over medium heat
brown chicken in batches remove and set aside
add onion and mushroom saute 5-7 minutes
stir in flour and mix in garlic salt
pour into tomatoes and broth cook 5-7 mins
return chicken to pan then put all in casserole dish and cover
bake 30 mins-uncover add sliced tomatoes sprinkle with Parmesan cheese and put under broiler till just browned
