Garlicky Pickled Veggies

Ingredients

  • corn, cauliflower, peppers, green beans, carrots, onions, green tomatoes, radishes, golden beets, baby beets
  • 3 C white vinegar
  • 1 C sugar
  • 1 T salt
  • 18 garlic cloves, smashed
  • 1 1/2 t crp

Preparation

Step 1

Boil veggies, uncovered, 3 min. Drain. Combine water, vinegar, sugar and salt in heavy pot and bring to boil. Stir to dissolve sugar. Pack veggies into canning jars. Add garlic and crp to each, pour vinegar mix over, screw on lids. Process jars. Cool.
