A sweet, warm-spiced, streusel-topped apple bread

Ingredients

  • STREUSEL TOPPING
  • 1/2 cup light brown sugar
  • 1/4 cup flour
  • 2 teaspoons cinnamon
  • 4 tablespoons cold unsalted butter, diced
  • 1/2 cup old-fashioned rolled oats
  • BREAD
  • 3 cups peeled, cored, and chopped Honeycrisp apples
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon
  • 3 cups flour
  • 2 teaspoons EACH of baking powder and cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon EACH salt, ginger, nutmeg
  • 1/8 teaspoon cloves
  • 3/4 cup dried cranberries
  • 1 stick unsalted butter, melted and slightly cooled
  • 1/2 cup unsweetened applesauce
  • 1/2 cup sour cream
  • 1/2 cup light brown sugar
  • 1/2 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla

Preparation

Step 1

Preheat oven to 325. Coat two loaf pans with nonstick spray.

STREUSEL TOPPING: Whisk together brown sugar, flour, cinnamon; cut in cold butter using a pastry blender. Mix oats into streusel mixture with your hands until thoroughly combined and clumps form; chill.

BREAD: Toss apples with 1 tablespoon of sugar and 1 teaspoon of cinnamon.

Combine 3 cups flour, baking powder, 2 teaspoons cinnamon, baking soda, salt, ginger, nutmeg, and cloves in a large bowl. Toss cranberries and apple mixture into flour mixture, then form a well in the center.

Whisk together melted butter, applesauce, sour cream, 1/2 cup brown sugar, 1/2 cup sugar, eggs, and vanilla in a large measuring cup; pour into dry ingredients, stirring until just incorporated.

Divide batter between prepared pans; top each with streusel. Bake loaves until toothpick is clean, 50 to 60 minutes.
