Corned Beef Stir-Fry

The celery seed really comes through in this colorful combination of carrots, cabbage and corned beef.

Ingredients

  • 7 T oil, divided
  • 3 T vinegar
  • 2 T sugar
  • 1 t celery seed
  • 1/4 t salt
  • 6 cups coarsely chopped cabbage
  • 1 c shredded carrots
  • 1/4 c green onions chopped
  • 1/2 Ib thinly sliced fully cooked corned beef

Preparation

Step 1

In a bowl, whisk 4 T oil, vinegar, sugar, celery seed and salt until sugar is dissolved; set aside. In a skillet, saute the vegetables in the remaining oil until crisp tender, about 15 minutes. Stir in vinegar mixture and corned beef. Cover and simmer until heated through.
