Ingredients
- 2 medium potatoes, cooked and mashed
- 2 - 16 oz. bags of coconut
- 2 tsp. vanilla
- 1/2 tsp. salt
- 6 lb. confectioners sugar
- 2 lb. melted chocolate
Preparation
Step 1
Thoroughly mix potatoes, coconut, salt and vanilla.
Gradually add sugar and mix until thoroughly blended. Shape into eggs and chill overnight.
Dip into chocolate and set onto waxed paper to harden.
Decorate the top to your liking with chocolate or nuts.
