TUNA MAC DELIGHT

This tuna salad is perfect for a quick midweek meal as well as a good ol picnic standby.

Ingredients

  • 1 (13 oz.) box of dried whole wheat pasta (rotini,elbow and shells all work great)
  • 1 1/2 cups light mayonnaise
  • 2 cups shredded or cubed cheddar cheese
  • 3/4 cup sweet pickle relish
  • Pepper to taste
  • Garlic salt to taste
  • 2 (7 oz.) cans of chunky light tuna packed in water, drained
  • 1/2 red onion, diced
  • 3/4 cup chopped dill pickle
  • 5 celery stalks, finely chopped

Preparation

Step 1

Cook pasta in a large pot of boiling water until done, drain.
In a small bowl mix mayonnaise, cheese, relish, pepper and garlic salt. Cover and place in fridge to marinate (about 30 minutes).
Place remaining ingredients in a big bowl with pasta. Toss with mayo mixture from the fridge and enjoy.
