Ingredients
- 2 garlic cloves
- 1/2 teaspoon kosher salt
- 1/3 cup extra-virgin olive oil
- 1/3 cup low-fat firm silken tofu
- 2 tablespoons chopped fresh flat-leaf parsley
Preparation
Step 1
Mash garlic with kosher salt into paste in mortar and pestle or with side of knife. Transfer to blender. Add extra-virgin olive oil and low-fat firm silken tofu; blend until smooth and creamy. Transfer to serving bowl. Stir in chopped fresh flat-leaf parsley.
This recipe yields about 1/2 cup.
