Lobster Bisque Soup

Ingredients

  • 3 T butter
  • 1 small onion finely chopped (1/4 cup)
  • 3 T flour or potato starch
  • 1 T chopped parsley
  • 1/2 t salt
  • 1/8 t pepper
  • 1 t Old Bay Season
  • 1 t paprika
  • 2 cups milk
  • 1 cup chicken broth
  • 1 1/4 cups chopped fresh or frozen lobster (about 12 0z.)

Preparation

Step 1

Dutch Oven
Melt butter in 3 quart Dutch over, add onions, cook until tender. Stir in flour, parsley, salt, pepper, Old Spice, and paprika. Cook stirring constantly. (about 1 minute)
Stir in milk and broth. heat to a boil, stirring constantly. Boil 1 minute, add lobster heat to a simmer for about 3 minutes until lobster is white.
