Spinach Cakes

Ingredients

  • 1 bag of baby spinach
  • 8 oz. chopped onions
  • 1 C. of cheese (feta, parmesan, ricotta)
  • Olive oil / grape seed oil to fry
  • 1/2 C. bread crumbs (approx.)
  • Flour
  • 2 eggs
  • salt

Preparation

Step 1

Saute onions in some canola. Chop up spinach. Mix in a bowl. Add enough olive oil to lightly coat. Add bread crumbs. Mix in eggs and add salt.

Make cakes and place in hot oil. Flip.
