Eggplant or Chicken Parmesan

Ingredients

  • 1 medium onion
  • 1 medium eggplant OR
  • 6 boneless, skinless chicken breasts
  • 1 large jar spaghetti sauce
  • 16 ounces mozzarella cheese
  • bread crumbs
  • eggs beaten
  • 1 package spaghetti cooked

Preparation

Step 1

Dice onion and saute in butter. Eggwash eggplant slices or chicken and roll in bread crumbs. Fry until golden brown. Remove and drain.

Prepare: Lay eggplant or chicken strips into baking pan. Top with mozzarella cheese and sauce. Repeat if second layer required. Bake at 350 F for 20 minutes or until cheese is melted.
