Roasted Garlic-Bacon Dip

Jeanette's Mexican Pasta!

Ingredients

  • 1 packet taco seasoning (Lawry's)
  • 1.5 lbs bow tie pasta
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can black olives, sliced
  • 1 can Rotel (original)
  • 1/2 - 1 jar salsa
  • 1/2 onion, diced
  • 1 green pepper, diced
  • 2 T EVOO
  • 3 T cream cheese (or sour cream)

Preparation

Step 1

1. Cook pasta to al dente
2. heat EVOO in skillet and brown onion and green pepper.
3. Stir in corn till heated through
4. Stir in black beans till heated through
5. Stir in olives till heated through
6. Pour in salsa and rotel
7. Pour over pasta and serve
