Ingredients

  • 1-3 pound boneless leg of lamb (I got it from Costco) or other
  • salt and Pepper to taste
  • 1 teaspoon of rosemary
  • 1 teaspoon of sage
  • 1 tablespoon of olive oil

Preparation

Step 1

Preheat oven to 400F
coat leg of lamb with olive oil
season lamb with salt, pepper, rosemary and sage
Place in a baking dish
Put in internal meat thermometer in thickest part of roast
Place in oven
Cook about 20 minutes a pound - medium thermometer will read 145F
Remove from oven, tent with foil and let it rest for 10 minutes.
