Ingredients
- 5 med.-sized sweet potatoes
- Boiling water
- 1 tsp. salt
- 1 c. brown sugar
- 1 c. orange juice
- 1/2 c. water
- 4 Tbsp. butter
- 1/4 c. chopped pecans
Preparation
Step 1
Scrub sweet potatoes, cover with boiling salted water and cook until tender. Cool slightly, peel while still warm, cut length-wise into inch-thick slices. Set aside to cool. Meanwhile, cook together for 5 mins. brown sugar, orange juice and water. Melt butter in a heavy iron skillet; lay in potatoes and place over low heat. Drizzle with syrup and baste with additional sauce every few mins. until the potatoes are glazed. Arrange candied sweets in serving dish, spoon over pan syrup and garnish with pecans.
