Lemon Meringue Pie

Ingredients

  • 3 large egg yolks
  • 1/3 cup cornstarch
  • 1 1/2 cups water
  • 2 cups sugar
  • 3 Tbsp unsalted butter
  • 6 Tbsp lemon juice
  • 3 Tbsp lemon zest
  • 4 large egg whites
  • 1 ready made 9" pie crust

Preparation

Step 1

1. Preheat oven to 400 degrees.

2. To prepare filling: Whisk egg yolks until lemony color and set aside. Combine cornstarch, water and 1 1/2 cups sugar in saucepan over medium heat. Stir until thick, then boil for one minute. Pour half of mixture into egg yolks and whisk to combine. Return to saucepan and boil for one minute, stirring constantly. Remove from heat and stir until smooth. Blend in butter, lemon juice and lemon zest. Pour into pie shell.

3. For meringue: Whip egg whites using and electric mixer on high speed for one to two minutes. Gradually add 1/2 cup sugar and whip until whites are thick and glossy. Spread meringue over pie filling.

4. Bake 15-18 min until lightly browned. Allow pie to cool for one hour, then refrigerate until cold.
