Ingredients
- 1 pound ground beef
- 1 chopped onion
- Sauce
- 1 can (14 ounce size) crushed tomatoes
- 1 cup water or stock
- 1/4 teaspoon black pepper
- 1 teaspoon salt
- 1 tablespoon chili powder or to taste
- 1 cup drained whole kernel corn
- 1/2 cup seeded and chopped green bell pepper
- Topping
- 1 1/2 cup cornmeal
- 2 tablespoons flour
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 2 beaten eggs
- 2/3 cup milk
- 2 tablespoons vegetable oil
Preparation
Step 1
Brown beef and onion in a pan; drain. Add remaining sauce ingredients; simmer for 15 minutes.
Preheat oven to 425 degrees F.
Mix dry topping ingredients. Stir in remaining ingredients. Place meat mixture in a 2-quart casserole and cover with the topping. Bake 20 to 25 minutes or until corn bread is brown.
