Beef and Blue Cheese Crostini

Ingredients

• 1 French bread baguette (10 oz)
• cooking spray
• 1/2 t coarsely ground pepper
• 1/2 c redduced fat sour cream
• 2 T minced chives
• 1 T horseradish
• 1/4 t salt
• 1 1/4 lbs shaved deli roast beef
• 1/3 c crumbled blue cheese
• additional minced chives

Preparation

Step 1

Cut baguette into 36 slices. Place on ungreased baking sheets. Spritz with cooking spray. Sprinkle with pepper. Bake at 400 for 4-6 min or until lightly browned.

Meanwhile, in a small bowl, combine the sour cream, chives, horseradish and salt. Top toasts with beef; dollop with sour cream mixture. Sprinkle with cheese and additional chives.
