Black Bean Soup

Ingredients

  • 2 Tbs. Olive Oil
  • 1 medium Onion diced
  • 2 cloves Garlic or 1/2 tsp.dried minced garlic
  • 3 ribs Celery chopped
  • 2 Carrots diced
  • 1 small Green Pepper diced
  • 2-4 cans 15 oz. Black Beans
  • 5 cups vegetable or chicken stock
  • 2 Tbs. Apple Cider Vinegar
  • 2 tsp. Chili powder
  • 1/2 tsp. Cayenne pepper
  • 1/2 tsp ground Cumin
  • Salt to taste

Preparation

Step 1

In a stockpot, heat the oil over low heat. Add onion, garlic, celery, carrots, and bell pepper and cook for 15 minutes. Drain and rinse beans add to mixture. Add water, soup base and rest of ingredients. Bring to boil and simmer at low heat for about an hour.
