Ingredients
- 1 large lemon
- 4 eggs
- 1 stick (8 Tblsp) melted butter
- 1 tsp vanilla extract
- 1 1/2 cups sugar
- 1 unbaked pie crust
- whipped cream
Preparation
Step 1
Preheat oven to 350.
(Works best in 8" pie pan)
Leaving rind on, cut lemon in small chunks. Remove seeds.
Blend together (using blender) lemon chunks, eggs, butter, vanilla, & sugar until mixture is smooth & creamy (it should be fairly runny).
Pour into unbaked pie crust.
Bake at 350 for about 40 minutes.
If crust becomes too brown, cover gently with foil & finish baking.
Serve with dollop of whipped cream.
