Mashed potato pancakes

Use leftover mashed potatoes

Ingredients

  • 2 cups mashed potatoes
  • 1 egg
  • 1/4 cup grated Parmesan
  • Salt and pepper
  • Vegetable oil

Preparation

Step 1

In a large bowl, stir together mashed potatoes, beaten egg, and Parmesan. Season with salt and pepper. In a large nonstick skillet, heat 1 tsp veg oil over medium heat. In batches, drop heaping spoonfuls of potato mixture into skillet. Press with a spatula to flatten. Cook until golden brown, 3 minutes. Flip and cook other side 3 more minutes. Repeat with rest of potato mix and oil.
