Ingredients
- 3 lbs chicken thighs
- 2 red onion, sliced
- 2 garlic cloves, crushed
- 3 red peppers, cut into 1" strips
- 3 oz procuitto
- 1 T thyme
- 2 t sweet paprika
- 8 black and 8 green olives
- 6 ripe tomatoes, peel and scoop out seeds
Preparation
Step 1
Cook chicken 4-5 minutes, turn over for 2-3 more minutes
Add onion, garlic, thyme cook about 8-10 minutes more until soft.
Add peppers, olive and tomatoes and simmer for 25 - 30 minutes
