PUMPKIN BREAD

  • 1 can pumpkin
  • 1/2 C applesauce
  • 1/2 C oil
  • 3 eggs
  • 3 C sugar
  • 3 C flour
  • 1 t nutmeg
  • 1 t cinnamon
  • 1 t cloves
  • 1 t baking soda
  • 1/2 t Salt
  • 1/2 t baking powder

Preparation

Step 1

Preheat oven to 350 degrees. Spray 2 9 X 5 loaf pans or 6 small loaf pans with Pam or Baker’s Joy. (Recipe actually says butter and flour, but I never do.)
In large bowl beat sugar, oil, and applesauce until blended. Mix in eggs and pumpkin.
In another bowl, sift flour, cloves, cinnamon, nutmeg, baking soda, salt, and baking powder.
Slowly add the dry ingredients to the wet ingredients while mixing.
Divide batter between pans, bake until a tester comes out clean (about an hour). I have found that smaller pans take a little less than an hour, and I’ve had larger ones take a little over an hour, so check as frequently as possible.
Cool in pans for 10 minutes and then transfer to cooling rack
