Posh Squash

Ingredients

  • 2 lbs yellow squash, sliced
  • 1 cup mayo
  • 1 cup grated parmesan cheese
  • 1 small onion, chopped
  • 2 eggs, beaten
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup breadcrumbs
  • 1 TBS butter, melted

Preparation

Step 1

Cook squash and onion. Drain and cool slightly. Combine mayo, cheese, eggs, salt and pepper; stir well until combined. Fold into squash. Pour squash into a lightly greased baking dish. Combine breadcrumbs with butter; spoon over squash. Bake at 350 degrees for 30 minutes.
