Roasted Shallot Yogurt Dip

Ingredients

  • 6 shallots (unpeeled)
  • 3 cloves garlic (unpeeled)
  • 2 tsp extra virgin olive oil
  • 1 c plain low-fat Greek yogurt
  • 3 tbsp chopped chives, plus more for topping
  • Kosher salt

Preparation

Step 1

1. Preheat oven to 350 degrees. Toss the shallots and garlic with the olive oil on a rimmed baking sheet. Bake until softened, 20 to 30 minutes. Let cool slightly, then peel.
2. Finely chop the shallots and garlic, and mix with the yogurt and chives in a medium bowl. Season with salt. Sprinkle with more chives before serving.
