Eggplant Relish Dip

Ingredients

  • 1 large eggplant
  • 1 large onion
  • 1/2 green pepper
  • squeeze fresh lemon juice

Preparation

Step 1

Wrap eggplant tightly in foil. Place on top of fire on stove with small flame for 1 1/2 hrs until soft and mushy. Remove skin and mash. Saute onion and green pepper. Wait until cool and add to eggplant. Squeeze lemon juice and season to taste.
