Ingredients
- 1 box couscous
- 2 cups cucumbers, diced
- 1 cup fresh parsley, chopped
- 1/2 cup red onion, chopped
- 1/2 cup feta cheese
- 2 cloves garlic, minced
- 1/4 cup lemon juice
- 1/4 cup olive oil
Preparation
Step 1
Prepare couscous according to directions on box.
Mix cucumbers, parsley, onion and cheese into couscous.
Mix garlic, lemon juice and olive oil in a bowl and pour over couscous mixture.
Refrigerate before serving.
