Ingredients
- I pound large raw shrimp, peeled ond deveind
- I pound mushrooms
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 6 green onions, thinly sliced
- 1/2 tsp. salt
- 1/4 tsp.black pepper
- 3 Tablespoons white wine
- juice of 1 lemon
- 2 Tbsp. chopped fresh parsley
Preparation
Step 1
Rinse shrimp and pat dry. Remove and discard stems from mushrooms,
cut caps in half. Heat olive oil in lg. skillet, add shrimp
mushrooms, green onions, s&p. Cook stirring occasionally,
until shrimp are pink and firm on both sides' Add wine, lemon iuice, and
parsley and cook another 2 minutes.
Makes 3 servings.
