Ingredients
- 8 Lg potatoes, peeled & chopped into chunks
- 4 to 5 green onions, green & white parts chopped fine
- 2 lbs of thin bacon, cut in half (reserve bacon drippings)
- White vinegar, to taste
- salt, to taste
- pepper, to taste
Preparation
Step 1
In a large pot add peeled & chopped pototes, enough water to cover pototes, and 1 T of salt. Bring the potatoes to boil until potatoes are cooked tender.
In a skillet cook bacon until crispy. Reserve the bacon drippings.
Crumble the bacon up into chunks and set to the side.
To a large bowl add the cooked potatoes, minced green onions, crumbled bacon and stir. Add to the bowl white vinegar, salt & pepper, reserved bacon drippings to your taste. Serve warm or cold. I like it better warm.
