This is the BEST GERMAN POTATO SALAD recipe ever!

Ingredients

  • 8 Lg potatoes, peeled & chopped into chunks
  • 4 to 5 green onions, green & white parts chopped fine
  • 2 lbs of thin bacon, cut in half (reserve bacon drippings)
  • White vinegar, to taste
  • salt, to taste
  • pepper, to taste

Preparation

Step 1

In a large pot add peeled & chopped pototes, enough water to cover pototes, and 1 T of salt. Bring the potatoes to boil until potatoes are cooked tender.
In a skillet cook bacon until crispy. Reserve the bacon drippings.
Crumble the bacon up into chunks and set to the side.
To a large bowl add the cooked potatoes, minced green onions, crumbled bacon and stir. Add to the bowl white vinegar, salt & pepper, reserved bacon drippings to your taste. Serve warm or cold. I like it better warm.
